 Harvested by hand during the second week of March . The grapes undergo a gentle pressing, and the must is meticulously fermented in a combination of stainless steel tanks and concrete vats, employing daily pumpovers for optimal extraction of flavors and aromas. The fermentation process is facilitated by carefully selected organic yeasts, isolated from the vineyard. 
 
Tasting Notes 
The wine presents a delicate violet colour with bluish reflections.  Soft and rounded tannins define the palate, accompanied by a medium body that enhances the overall drinking experience. The absence of oak allows the pure expression of the Criollas grape to shine through, making this wine an excellent choice for those who appreciate the unembellished essence of the varietal.

 Its fresh and fruity profile makes it an ideal companion to lighter fare, such as grilled vegetables, seafood, or poultry. The wine's soft and rounded tannins complement the textures of dishes like roasted chicken or vegetable-based pasta.
