The bunches are harvested by hand with great care and laid out in a single layer in shallow crates, which are stored in the drying rooms at controlled conditions of temperature and humidity. The withering lasts about four months and the grapes undergo a weight loss of at least 40%, then they are pressed. The fermentation process lasts 30 days and is arrested by chilling the wine, leaving a substantial amount of residual sugar still in it. The wine thus obtained begins its maturation in oak barriques for at least one year and then it remains further six months in bottle before being released.
